To prepare this picnic recipe, you will need….
8 medium tomatoes, sliced
¼ c. fresh minced parsley
¼ c. olive oil
2 tbsp. red wine vinegar
2 tsp. Dijon mustard
1 garlic clove, minced
1 tsp. sugar
1 tsp. salt
To prepare this picnic recipe…
Arrange tomatoes in a serving bowl; sprinkle with parsley. Whisk together the remaining ingredients and pour over the tomatoes. Cover and refrigerate until it’s picnic time. Makes 8 servings.
Colorful Corn Salad
This colorful, refreshing corn salad is an excellent recipe for perking up your next summer picnic. Prepare this delicious recipe at least 30 minutes prior to your picnic to allow the flavors to blend.
To prepare this picnic recipe, you will need….
2 packages (10 oz.) frozen corn, drained or 10 ½ c. fresh corn (approx. 20 ears of corn)
2 c. diced green pepper
2 c. diced sweet red pepper
2 c. diced celery
1 c. fresh minced parsley
1 c. chopped green onions
½ c. grated Parmesan cheese
2 tsp. ground cumin
1 ½ tsp. salt
¾ tsp. pepper
½ tsp. Tabasco sauce
Dash of cayenne pepper
3 tbsp. olive oil
2 garlic cloves, minced
6 tbsp. lime juice

Combine the first 12 ingredients in a large serving bowl. Combine the oil and garlic in a microwave-safe bowl and microwave on high for 1 minute. Cool, then whisk in the lime juice. Pour over the corn mixture and toss to coat. Cover and refrigerate until it’s picnic time. Makes 16-18 servings.
Dijon Chicken Salad
When the weather warms up, the cool, refreshing flavors of this easy recipe are a delightful addition to your summer picnic menu.
To prepare this picnic recipe, you will need….
4 c. cooked chicken, cubed
1 c. sliced celery
1 c. seedless green grapes, halved
1 c. seedless red grapes, halved
¼ c. dried apricots, chopped
¼ c. green onions, sliced
¾ c. mayonnaise
2 tbsp. honey
1 tbsp. Dijon mustard
½ tsp. salt
Dash of pepper
Lettuce leaves (enough to line a serving bowl)

Line a serving bowl with the lettuce leaves, set aside. Combine the first six ingredients in another bowl, set aside. In a small bowl, combine the mayonnaise, honey, mustard, salt and pepper. Whisk together and stir into the chicken mixture. Transfer the salad into the serving bowl lined with lettuce leaves. Cover and refrigerate until it’s picnic time. Makes 6 servings.
