Summer barbequeing is especially nice when family and friends gather and everyone brings a unique food item to share. The following recipes, perfect choices for a summer BBQ, are easy to make and will surely impress your host or your guests. I have also included chilled pork and bean salad and cucumbers with onions and yogurt dressing recipes as well, which are wonderful cold food additions for a barbeque.
Beer Simmered Barbequed Kielbasa – Serves 4 – Adjust Recipe Accordingly
2 (12 ounce) bottles beer (preferably nut brown or summer ale)
2 medium onions, thinly sliced
1 large bay leaf (or 2 small)
1 small clove garlic, chopped
1/8 teaspoon sea salt
¼ teaspoon fresh ground pepper
1-pound kielbasa – cut diagonally into portion size (2 ounces) pieces
In a pan on medium heat, bring to a boil beer, onions, garlic, bay leaf, salt and pepper. Add kielbasa and simmer
15 minutes. Kielbasa is ready to grill for about 5 minutes, turning once.
Foiled Grilled Onions and Sliced Red Potatoes with Bacon Bits
1 medium – large red potato per person – sliced (not too thin)
5 medium onions, sliced thin
¼ cup bacon bits
extra virgin olive oil or cooking spray
heavy-duty aluminum foil
Layer two sheets of foil, crimping up the edge all the way around (like a bowl) and coat with olive oil or cooking spray. Scrub red potatoes thoroughly and slice. Peel and slice onions. Place a layer of potatoes in the foil followed by a layer of onions, repeat steps until foil is full, but manageable. Sprinkle bacon bits on top. Cover with another sheet of foil and crimp around the edges. Make a couple steam vents on the top foil, with the tip of a knife. Cook, on a hot grill, for approximately 45 minutes or until potatoes are soft. This is a perfect summer BBQ delight for a cookout.
Chilled Spicy Pork and Bean Salad with Sharp Shredded Cheddar
1 can (31 ounce) pork and beans
1 cup shredded sharp cheddar cheese
3 hard-boiled eggs (chopped)
½-cup sweet pickles (chopped)
½-cup onion (chopped)
½-cup celery (chopped)
2 tablespoons chili sauce or chunky salsa
ground pepper to taste
Combine all ingredients, toss gently and chill well before serving. Keep on ice at the outdoor barbeque.
Chilled Cucumbers and Onions with Yogurt Dressing
4 cucumbers (peeled, very thinly sliced)
2 medium onions (peeled, very thinly sliced)
1-cup plain yogurt
1 clove garlic (minced)
¼-cup fresh chives (finely chopped)
1 teaspoon dried mint
1-tablespoon lemon juice (fresh squeezed)
½-teaspoon sea salt
1/8 teaspoon fresh ground pepper
Combine and mix dressing ingredients and chill thoroughly. Add desired amount to cucumbers and onions and mix gently. Keep on ice at the barbecue so this dish is refreshingly chilled when served. When it comes to a summer barbeque, these recipes are appetizing and a big hit at any gathering.
